Indian Pumpkin Butter Chicken

2 tbsp extra virgin olive oil
1/2 medium onion diced
2 inch knob of fresh ginger grated
4 cloves of garlic
1 tbsp garam masala
1-2 tsp yellow curry powder
1/2 tsp turmeric
1 tsp cayenne pepper (optional)
sea salt & cracked pepper
4 cooked chicken breasts or 1 whole chicken either shredded or cubed
1 can full fat coconut milk
1 cup canned pumpkin
2 tbsp tomato paste
2 tbsp coconut oil
1/4 fresh cilantro, chopped

Heat the oil and cook the onion for 5 min, add ginger and garlic & cook for another 2 minutes.
Stir in spices, cook another few minutes.

Then add coconut milk, pumpkin, tomato paste, coconut oil and 1/2 cup of water. Simmer for a few minutes, mix in the cooked chicken and cilantro heat through. Season with salt & pepper.

Serve over steamed brown rice and top with extra cilantro!
